toDocumentClassInfo

Converts Verify API class info into the SDK domain DocumentClassInfo.

Known API strings are mapped to strongly typed CountryId, RegionId, and DocumentTypeId when possible; unknown values (e.g. from future OTA document classes) keep id as null and preserve the API string in DocumentClassInfo.Country.rawValue.
